This has to be the easiest meal that fills me up when I am done:

6 egg
1/3 cup plain flour
1/4 tsp salt
1 cup milk
1 cup tasty cheese, grated
For the Salsa
3 large tomatoes, chopped
1 Tbsp red onion, chopped
squeeze of lemon juice
1 Tbsp sweet chilli sauce
2 Tbsp parsley, chopped
Preheat oven to 250C. Place eggs, milk, flour and salt in a blender and whiz to combine, then add the grated cheese afterwards.
Pour mixture into a well greased swiss roll tin around 33 x 23cm and bake for 15 minutes or until golden and puffed up. While the souffle roll is cooking make the salsa by combining all the ingredients in a bowl and set aside.
When the souffle roll is cooked turn it out onto a clean tea towel. Scatter over the salsa and roll up from the short side to form a swiss roll. Place on a serving platter with the seam underneath. Serve in thick slices.
NB: I usually add some cooked bacon or Chorizo sausage as we are a 'meat family'! :)
