Peanut + Chicken Goodness
Our dinner last night was YUMO!
Kung Pao Chicken
500g Chicken breast, chopped into cubes
4 tsp crushed garlic
1 inch cube of fresh ginger grated
2 tbsp white cooking wine
Place the chopped chicken, garlic, ginger and cooking wine in a large bowl and refrigerate while preparing the remaining ingredients.
1/2 cup skinless peanuts (unsalted)
1 medium onion chopped
1 medium capsicum chopped
A handful of dried red chiles or a dash of chili powder
Small can of sliced water chestnuts, drained
1/2 cup chicken broth (from OXO cube)
1 tbsp soy sauce
2 tbsp peanut sauce (I didn't have this so just used some peanut butter)
2 tbsp peanut oil
In a large wod, heat a tablespoon of peanut oil over medium-high heat for a few seconds, and then add the chicken and its marinade. Stir-fry until the chicken is cooked throughout - about 6-8 minutes.
Remove the chicken and add another tablespoon of peanut oil. Stir-fry the peanuts for about 3 minuts until browned. Add the onions, capsicum, chestnuts and red chillies until vegetables start to brown, about 5 minutes.
Add chicken broth, soy sauce and peanut sauce. Mix thoroughly and serve.
Takes about 30mins to prep and cook, but super easy.
And in case you think I have dream kids who eat anything - this is what they have.......

The wait is over
We have been waiting for 5 months to have an appointment with the Hastings Hospital to see if they will remove Crazy 2s tonsils. Finally the day came yesterday and within 5mins of sitting down with the specialist he said they have to come out!
I am so thrilled as the poor boy has snored since birth and now can be heard from his room when we are in the lounge with the tele on. Needless to say we aren't looking forward to camping in the new year with him!
They said he will be seen within the next 8 weeks so the end is in sight.
This is a diagram of where they are within the mouth and the adenoids which will probably be removed as well.
Although I am terrified to think my baby will be on a table having these removed and I can't be there with him, the benefits far outweigh these concerns. Along with the snoring he has apnea which is obviously a big concern for his age.

Colouring Competitions
We have entered the stage of competitions in our house. Crazy 1 has just finished his first colouring competition through Kindy to win a Puss in Boots prize pack.
He can sit for an hour and colour in pictures - he loves it. It is quite cute to sit and watch him. He has such a high concentration level you can sometimes talk to him and he just switches off (or is that just called Selective Hearing!) He has very high standards for himself and if he goes over the lines he is on the verge of tears. Sweet.
Anyway, here he is with his first competition picture - sure is chuffed.

Project Restyle #4 - Canvas and Crayon Art
If you are a keen 'pinner' you no doubt will have seen these on there. I loved the idea and the fact that they are super duper easy peasy.
So this morning I set to it - have had the materials of a wee while but just no motivation.
Now the first rule is you need to either have this playing in the background or sing it as you work! :)
Take one white canvas (any size you want) and arrange your crayons in colour order - I didn't quite use 3 boxes of 24, I also took out the brown, grey, black and white ones.
I started with my hairdryer on high but soon realised the melted crayon was going everywhere, other than down!
Might not be everyones cup of tea, but I love them.
So this morning I set to it - have had the materials of a wee while but just no motivation.

Hot glue them to the canvas with pointed end facing down. Set to it with either your hairdryer or a heat gun and watch the melting/dribble action begin.

Baking Carnage on a Rainy Day
I decided to make some shortbread for Christmas (early I know) and store it up in the freezer.

A while ago I was gifted a beautiful 1944 Spiritual Almanac for Wartime book.
Insert: It is a book for men and women engaged in the defense of the nation and is a collection of general information of religious and patriotic significance to wide awake service men and women and workers in defense industries; together with apt selections from the Bible and worth prayers and hymns;
Today was the first time I actually opened it to see what was inside and came across this:
Dear Master, in whose life I see
All that I long, but fail, to be;
Let the clear light forever shine,
To shame and guide this life of mine.
Tho' what I dream and what I do
In all my days are often two,
Help me, opress'd by things undone,
O thou whose deeds and dreams were one.
Wow - if only more people today would pray like that!
Hoping to be encouraged more as I read through.

125th Fire Service Jubilee
Like kids in a candy store my boys (x3!) loved our morning outing to see the jubilee on Saturday. Felt a bit sorry for them (fire guys), that more people didn't show up. Was great for us though as we didn't have to wait long before sitting in a truck.
